Cami’s grandmother always had magic middles for us (and anyone else) when we would visit. They were so good. Cami got the recipe and does a great job carrying on the tradition.
Cookie Dough:
- 3 cups flour
- 1 cup dry cocoa
- 1 tsp baking soda
- 1 cup sugar
- 1 cup packed brown sugar
- 1 cup, or 2 sticks, margarine or butter – soft
- 1/2 cup peanut butter – creamy
- 2 tsp vanilla
- 2 eggs
Filling:
- 1 cup creamy peanut butter
- 1 cup powdered sugar
Mix filling and roll into 1″ balls. Set aside.
In a small bowl, mix flour, cocoa, and baking soda. In a large bowl, beat sugars, margarine, and the 1/2 cup peanut butter until light and fluffy. Add vanilla and eggs. Beat well. Stir in flour mixture.
For each cookie, shape about 1 Tbsp of dough around 1 peanut butter ball, covering completely. Place 2″ apart on un-greased cookie sheet. Flatten with bottom of glass dipped in sugar. Bake at 375 degrees for 7-9 minutes, or until set an slightly cracked. Carefully remove to cool on wire rack. Makes 3 1/2 dozen big cookies.
